Mother’s day is just around the corner, and maybe instead of scrambling for a gift you don’t really want to pay for and your loved one really doesn’t want – have a Mother’s Day tea instead. Mini cucumber tea sandwiches
with whipped dill cream cheese
Serves 4 (2 mini sandwiches per person)
Ingredients:
- 4 slices of bread (any type)
- 1/2 English cucumber, very thinly sliced
- 1/4 cup whipped cream cheese
- 1 teaspoon dried dill, finely chopped
- Salt and pepper
- Sprouts for garnish (optional)
Directions:
- In a bowl add the cream cheese, fresh dill and salt and pepper to taste, mixing well.
- Spread each slice of bread with the cream cheese mixture. Layer the cucumber slices on 2 slices of bread topping with the additional 2 slices. Cut each sandwich into 4 pieces (8 total) and serve.
Pairing suggestion: Freshly brewed black tea sweetened with honey and fresh lime slices
Fresh tomato tea sandwiches
Serves 4 (2 mini sandwiches per person)
Ingredients:
- 4 slices bread (any type)
- 2 large tomatoes, sliced thick
- 1/4 cup mayonnaise
- 1 large garlic clove, crushed
- 1 teaspoon lemon juice
- Salt and pepper, to taste
- Fresh arugula (optional)
Directions:
- In a bowl add the mayonnaise, garlic and lemon juice, mixing well.
- Spread the mayonnaise mixture on each slice of bread. Add the tomatoes to 2 slices of bread. Top with additional slices of bread and cut each sandwich into 4 pieces (8 total) and serve.
Pairing suggestion: Freshly brewed lemon zinger tea
Creamy goat cheese and
roasted red pepper tea sandwiches
Serves 4 servings (2 mini sandwiches per person)
Ingredients:
- 1/4 cup goat cheese, softened at room temperature
- 4 slices bread (any type)
- 2 red bell peppers, halved and roasted (you can easily substitute jarred roasted red peppers)
- 1 cup fresh baby spinach
Directions:
- Spread the softened goat cheese on 2 slices of of bread.
- Divide the red peppers between the 2 sandwiches and top with fresh baby spinach. Add the remaining slices of bread and cut each sandwich into 4 pieces (8 total) and serve.
Pairing suggestion: Freshly brewed ginger tea
